Herbed Potato Fans

Not only are these totally cool looking, they are super easy to make. The kids loved them. The mixture of the herbs, olive oil and white wine gave the potatoes an amazing taste. Delicious.

2 baking potatoes
2 tbsp olive oil
1 tsp white wine or chicken broth
1/4 tsp salt
1/8 tsp dried parsley flakes
1/8 tsp thyme, crushed
1/8 tsp rosemary, crushed
1/8 tsp pepper
Green onions, optional
Sour cream or plain yogurt, optional

With a sharp knife, cut each potato into 1/2 inch slices, leaving slices attached at the bottom. Place on a microwave safe plate. Combine the oil, wine and seasonings. Drizzle over potatoes. Microwave, covered with paper towels, for 8-12 minutes or until tender. Garnish with onions and/or sour cream or yogurt. I garnished mine with plain low-fat yogurt.
