White Pizza

White pizza is by far my absolute favorite kind of pizza. I grew up in Ohio & could find white pizza in almost every pizza shop. When I moved to Georgia it could not be found anywhere so of course I had to start making my own. Thanks to my brother (who was once a pizza shop guy) for teaching me how to make pizza!

Ingredients
Click for my pizza dough recipes: whole wheat using a KitchenAid mixer or white flour using your hands
Olive oil
Italian seasonings
Garlic salt
Parmesan cheese
Shredded mozzarella cheese
Banana pepper rings (mild or hot)
Black olives

Directions
Make pizza dough. Coat pizza pan(s) heavily with shortening (do not substitute the shortening, it gives a brown crunchy crust). Pat dough into pizza pan(s). Drizzle lightly with olive oil. Evenly smooth the olive oil with the back of a spoon. Sprinkle with Italian seasonings, garlic salt & Parmesan cheese. Then top with mozzarella cheese. Add banana pepper rings & black olives. Lightly sprinkle the top with juice from the banana peppers. Bake at 450 degrees for 10-12 minutes.

Whole Wheat Pizza Dough

I love making pizza. This year I created this whole wheat pizza dough. It's the only version I make now. The family loves it. This recipe also gives the directions for making pizza dough with a stand mixer (I use a KitchenAid)

Ingredients
3 c whole wheat flour
3 c all purpose flour
2 packs of yeast
2 1/2 c lukewarm water
1 tsp salt
1 tsp sugar
1-2 tsp olive oil

Directions
Place lukewarm water in a large mixing bowl. Add yeast and sugar. Using a whisk, mix until yeast is dissolved. Allow to rest 5 minutes. Add salt and olive oil. Whisk together. Add the wheat flour. Attach dough hook to mixer and start mixing (start with the mix speed until flour settles then go to speed 2). Add 2 cups of the all purpose flour. Mix on speed 2. Add last cup of flour and mix on speed 2. At this point the dough ball should start pulling away from the bowl. If it is not then add a little more flour. You do not want to add too much as your dough will get dry. Once it's too dry there is nothing you can do but start over. Now lightly flour your counter and remove dough from mixing bowl. Work the flour into the dough by lightly kneading. Do not over work the dough. The dough should now be perfect and no longer sticky. Take another bowl and drizzle olive oil on the bottom of bowl. Take the ball of dough and coat on all sides with the oil. Cover bowl with dish towels. Allow dough to rise 25-30 minutes. I set my dough on the stove so that the heat from the warming oven helps speed up the process. Now you are ready to cut out portions of dough for pizza, roni rollers, etc.

Note: You must use a mixture of wheat and all purpose flour. Do not use all wheat flour or your dough will be more like a dry cracker.

Flat Bread Pizza

This is a great way to get the kids involved in making their own dinner. I let my kids make their own pizza. I put out all the ingredients & let them go to town making their own little pizza. It's fun, easy & inexpensive. I have also done the same thing with pita bread (click here for recipe).

Ingredients
1-2 pkgs flat bread
1 jar pizza sauce
1 pkg shredded mozzarella cheese
Favorite pizza toppings (pepperoni, onions, green peppers, olives, etc)

Directions
Put toppings on flat bread. Place flat bread pizzas on a baking sheet. Baking at 425 degrees for 8-10 minutes or until cheese is melted.
To make a pizza without the red sauce (as pictured above), drizzle flat bread with olive oil. Sprinkle with garlic salt, Italian seasonings, Parmesan cheese, shredded mozzarella cheese, banana peppers & diced tomatoes (You can also add feta cheese, black olives & just about anything else you like). Bake as directed above.

Spinach Rollers

Ingredients
Pizza Dough (click for recipe)
1 bag fresh baby spinach, chopped
Olive oil
Garlic powder
Red pepper flakes
Grated Parmesan cheese
2 c shredded mozzarella cheese
1 can/jar favorite pizza sauce

Directions
Note: You can also make roni rollers (click for recipe & instructions). I like to do make half & half :)

Drizzle chopped spinach with olive oil. Add garlic powder, red pepper flakes, & Parmesan cheese to taste. I actually taste the mixture to make sure it is seasoned perfectly. Set aside & allow it to marinate. Stir occasionally. Make your pizza dough according to the directions listed on my blog. Once the dough is ready. Using a sharp knife pull dough & cut a 7 ounce ball of dough. If you don't have a scale just eyeball it. Place the dough ball on a olive oiled surface. Pat dough until you form a circle (about 10 inches). Spoon spinach mixture onto dough. Sprinkle with Parmesan & top with mozzarella cheese.

Start rolling dough from one side. About halfway through fold both sides into the center as shown here. Then complete roll until you form a complete roller.

Place spinach roller (seam side down) on a greased baking sheet (for best results grease heavily with shortening).

Once you roll all the dough you will have a nice full sheet of spinach rollers (careful they are heavy). Place in a 425 degree oven.

After 10-12 minutes and rollers start to slightly brown, take a paper towel & scoop shortening onto towel & rub rollers with shortening. This will give the rollers a nice crispy, brown crust.

Bake an additional 10-12 minutes or until they look nice & brown.

Serve spinach rollers with pizza sauce - YUMMY, YUMMY!!!

Pizza

One of my favorite things to make is homemade pizza! I love making it & my family loves eating it. I always make 1 round pizza with mozzarella cheese (or the Italian cheese blend) & pepperoni for my kids. I make 1 large rectangle pizza with mozzarella cheese (or the Italian cheese blend), Parmesan cheese, pepperoni, green bell peppers & vidalia onions for my husband. The last pizza is always my experimental pizza. I love to try things like olive oil, Italian seasonings, banana peppers, tomatoes, feta cheese, capers, olives, etc.

Ingredients
Pizza Dough Recipe (click to see on my blog)
Favorite pizza sauce (see below for ours)
Favorite toppings (shredded cheese, pepperoni, onions, green bell peppers, etc.)

Directions
Lower oven rack to the next to the lowest position. Pre-heat oven to 450 degrees. Heavily grease pans with shortening (to obtain a crisp crust you must grease heavily). Pull out enough dough for the pan you are using. Press dough into pan evenly. Allow dough to sit in pans for about 5 minutes before you start making the pizzas. Next you will add your sauce & toppings. Bake for 8-11 minutes. I always set my timer for 8 minutes & then add time after I check on it. Cook until it reaches your desired doneness.

I use a sharp knife to "cut" my dough out of the bowl.

This picture shows the dough after it has been pressed into the pan.

We have tried many different sauces.

We like this sauce best (notice it is not a pizza sauce).

Pizza placed on the next to the last rack.

Yummy pizza after being removed from the oven.

Rectangle pizza with cheeses, pepperoni, green bell peppers & onions

One of my experimental pizzas - tasty!

Notice I never use red sauce on my test pizza.

This one had olive oil, Italian seasonings, garlic salt, mozzarella cheese,

Parmesan cheese, feta cheese, Gorgonzola cheese and capers.

Bubble Up Pizza

I made this for dinner last night. It was very good. This recipe came out of my mom's recipe box. I think it is an old recipe from Pampered Chef.

14 oz jar spaghetti sauce, divided
2-3 c shredded mozzarella cheese, divided
1 garlic clove, pressed

Optional Toppings (pick your favorites)
Pepperoni, onion, olives, mushrooms, bacon, ham, peppers, etc.

Directions
Preheat oven to 350 degrees. Quarter biscuits & place in a large bowl. Stir in half of the sauce & half of the cheese. Add garlic & any of the optional toppings. Mix until biscuits are coated with the sauce. Spread mixture into a greased 9x13 pan. Pour remaining sauce & cheese over the top. Bake 25-30 minutes.

Roni Rollers

Ingredients
Pizza Dough (recipe can be found in my blog)
1 pkg. pepperoni
3-4 c. shredded mozzarella cheese
1 can/jar favorite pizza sauce (we like Hunt's Traditional sauce in a can)

Directions
Using a sharp knife pull dough & cut a 7 ounce ball of dough. If you don't have a scale just eyeball it. Place the dough ball on a olive oiled surface. Pat dough until you form a circle (about 10 inches). Sprinkle center with cheese & pepperoni.

Start rolling dough as shown below.

About halfway through fold both sides into the center as shown here. Then complete roll until you form a complete roller.

Place roni roller (seam side down) on a greased baking sheet.

Once you roll all the dough you will have a nice full sheet of roni rollers (careful they are heavy). Place in a 425 degree oven.
After 10-12 minutes and rollers start to slightly brown, take a paper towel & scoop shortening onto towel & rub rollers with shortening. This will give the rollers a nice crispy, brown crust.
Bake an additional 10-12 minutes or until they look nice & brown, like this.
Serve roni rollers with pizza sauce - YUMMY, YUMMY!!!

Pizza Dough

My brother, Shane, is the world's best pizza maker. He spent several years in high school working at a pizza place called Pizza Joe's. He was what we called the dough boy. He made all the dough for the pizza place every day. Now he does it for fun. The number one menu request when we go to Gulf Shores is pizza or roni rollers. After years of watching Shane make pizza dough, I finally attempted it myself several months ago. It's wasn't as hard as I thought it would be. So here it is - try it out!

Ingredients
6-7 c. all purpose flour
2 packs of yeast
2 1/2 c. lukewarm water
1 tsp salt
1 tsp sugar

Directions
Place lukewarm water in a large mixing bowl. Add sugar, salt, and yeast. Mix well until yeast is completely dissolved. Add 2 cups of flour at a time until 6 cups have been added. Then with the last 1 cup, add a little bit at a time until the dough is not wet. You will not need the entire cup & be careful not to get the dough too dry.
