Homemade Caramel

Think fall...think cider...think apples...think dipping in CARAMEL.  I had seen this "pinned" multiple times on Pinterest and was very skeptical, because it looked too easy.  Then I saw a friend make it, so I knew we had to try it.  It could not be any simpler.  We will do this over and over and over again!

Ingredients:
1 can sweetened condensed milk
Water
Crock pot

Instructions:
Place unopened can in the crock pot, completely cover the can with water. Cook on low for 8 hours. Remove from crock pot (ummm....it will be HOT!) and put in refrigerator to cool completely.  (Or until you can't stand to wait anymore!)  Open the can and enjoy the easiest caramel ever!!! I won't ever buy the little container again.

Warm Caramel Apple Cake

This recipe comes from my good friend, Carmen. It is gluten free.

Ingredients
Topping
1/4 c butter
2 tbsp whipping cream
1/2 c packed brown sugar
1/2 c chopped pecans
1 large tart cooking apple, peeled, thinly sliced

Cake
1 box Betty Crocker Gluten Free yellow cake mix
1/4 tsp apple pie spice or (1/8 tsp cinnamon and 1/8 tsp nutmeg)
2/3 c water
1/2 c butter, softened
3 eggs

Directions
Heat oven to 350 degrees.  In medium microwavable bowl, microwave butter, whipping cream and brown sugar uncovered on high about 1 minute or just until butter is melted. Pour into ungreased 9-inch or 8-in square pan.  Sprinkle with pecans. Top with apple slices. In large bowl, beat cake mix, apple pie spice, water, butter and eggs with mixer on low speed until moistened, then beat on medium speed 2 minutes, scraping bowl occasionally. Spread batter over apple mixture. Bake 9-inch pan 50-55 minutes, 8-inch pan 60-65 minutes, or until toothpick inserted near center comes out clean. (My oven cooked it faster). Cool in pan 10 minutes.  Loosen sides of cake from pan.  Place heatproof serving platter upside down on pan; carefully turn platter and pan over. Let pan remain over cake 1 minute so caramel can drizzle over cake. Remove pan.

Renee's Apple Crisp

My friend, Renee, from high school recently kept posting on Facebook about making all these apple crisps. I finally had to get her recipe. The smell of this while it is baking is like heaven. I just love the smell of apples & cinnamon. This was delicious & the family loved it.

Ingredients
Apples
2 c packed brown sugar
1 ½ c quick oats
1 ½ c flour
2 tsp cinnamon
1 c cold butter
Directions
Peel and slice apples into a 9 X 13 pan. (I simple fill the pan ¾ full). Combine brown sugar, oats, flour, and cinnamon in a bowl. Cut in cold butter. (I use my hands to blend all the ingredients into a thick crumb mixture). Cover apples with the crumb mixture. Bake at 375 degrees for 40-50 minutes.

Baked Brie

My cousin Pam sent this recipe to me. A friend of hers gave this recipe to her for Bunco night. It was a HUGE hit. I look forward to making this very soon. It is such a Fall recipe.

Ingredients
1 round of brie cheese
12 - 16 oz of caramel
1 c craisins
1/2 c chopped walnuts (optional)

Directions
Cut off the top case of the brie cheese to expose the cheese. Place in an oven safe dish. Spoon caramel over the top (use more or less depending on taste). Sprinkle with craisins. Sprinkle with walnuts. Bake at 325 degrees for about 20 - 25 minutes until the center of cheese is warm. Serve with apple slices, crackers or sliced crusty bread.

Apple Pork Chops

These pork chops had an interesting, unexpected taste. They were good, but not the taste we were expecting. We thought the apples would provide a more sweet flavor, but they did not. The apples didn't even have an apple taste.

Ingredients
2 tsp cornstarch
3/4 c chicken broth
4 boneless pork loin chops
2 tsp canola oil
1 large apple, peeled & thinly sliced
1 small onion, finely chopped
1/3 c apple juice
2 tsp Dijon mustard
1/4 tsp dried thyme
Directions
In a small bowl, combine cornstarch & broth; set aside. In a large skillet, brown pork chops in oil. Remove & keep warm. In the same skillet, saute apple & onion until apple is crisp tender. Stir in the broth mixture, apple juice, mustard & thyme. Bring to a boil. Add pork chops. Reduce heat. Cover & simmer for 8-10 minutes.

Caramel Apple Upside Down Cake

WOW!! I made this for our home team at church tonight & it was absolutely delightful. The cake could stand alone. It has a slight sweet & cinnamon taste. The topping really is like a yummy caramel apple. The two together is like a symphony.......

Ingredients

Topping
1/4 c butter or margarine
2/3 c packed brown sugar
1/2 tsp ground cinnamon
2 medium apples, peeled, cut into 1/2-inch wedges

Cake
1 1/3 c all-purpose flour
1 tsp baking powder
1/2 tsp ground cinnamon
1/4 tsp salt
1 c sugar
1/2 c butter or margarine, softened
2 eggs
1/2 tsp vanilla
1/4 c milk

Directions
Heat oven to 325°F. Spray bottom and sides of 8- or 9-inch square pan with cooking spray. In 1-quart saucepan, melt 1/4 cup butter over medium heat, stirring occasionally. Stir in brown sugar. Heat to boiling; remove from heat. Stir in 1/2 teaspoon cinnamon. Pour into pan; spread evenly. Arrange apple wedges over brown sugar mixture, overlapping tightly and making 2 layers if necessary. In medium bowl, mix flour, baking powder, 1/2 teaspoon cinnamon and the salt; set aside. In large bowl, beat 1 cup granulated sugar and 1/2 cup butter with electric mixer on medium speed, scraping bowl occasionally, until fluffy. Beat in eggs, one at a time, until smooth. Add vanilla. Gradually beat in flour mixture alternately with milk, beating after each addition until smooth. Spread batter over apple wedges in brown sugar mixture. Bake 55 to 65 minutes or until toothpick inserted in center comes out clean. Cool on cooling rack 15 minutes. Run knife around sides of pan to loosen cake. Place heatproof serving plate upside down over pan; turn plate and pan over. Remove pan. Serve warm cake with whipped cream. Store cake loosely covered.

Cinnamon Apple French Toast

I came up with this recipe by simply combining two great things: apples & french toast!

First, make the cinnamon apples (click for recipe).

Third, add some whip cream & serve. It is like breakfast, dinner & dessert all in one meal.

Cinnamon Apples

I hate when I buy a bag of apples & they start looking a little sad like 2 days after I get them home. I start eating & feeding the kids apples so I don't have to throw them away. It happened again this week so I decided to come up with a way to use all of those apples. I created this warm & delicious recipe. You can serve as a side dish to pork or chicken or you can serve with breakfast or you can simply add as a topping to vanilla ice cream. I ended up using it with my yummy french toast - Cinnamon Apple French Toast.

Ingredients
8 apples, peeled & diced
1/2 c butter
3/4 c brown sugar
1 1/2 tsp cinnamon
1 tsp vanilla
1/2 c apple juice

Directions
Put all ingredients except apples into a large saucepan. Cook over medium low heat until butter has melted & everything is combined. Add apples. Cook over medium low heat for 25 minutes or until apples are soft. Stir frequently. Serve warm.

Apple Dumpling Bake

If you want to blow people away with a yummy dessert then you must try this recipe. I have been making these for a couple years & people just love them. They are so simple to make but taste like you slaved over them for hours. It will be our "little" secret.

Ingredients
2 tubes refrigerated crescent rolls
2 medium Granny Smith apples, peeled & cored
1 c sugar
1/3 c butter or margarine, melted
3/4 c Mountain Dew soda
Ground cinnamon
Vanilla Ice Cream

Directions

Unroll crescent rolls & separate into 16 triangles. Cut each apple into 8 wedges. Wrap a crescent dough triangle around each apple wedge. Place in a greased 13x9x2 inch baking dish. In a bowl, combine sugar & butter; sprinkle over "rolls". Slowly pour the soda around the rolls. Do not stir. Sprinkle with cinnamon. Bake, uncovered at 350 degrees for 35-40 minutes or until golden brown. Serve warm with ice cream!
