Peanut Butter Oatmeal Chocolate Chip Cookies

I made these cookies for the first time as part of my Christmas baking. These are absolutely the best cookies ever. Seriously, these are officially my favorite cookie.

Ingredients
1 c all-purpose flour
1 tsp baking soda
¼ tsp salt
1 stick (½ cup) unsalted butter, at room temperature
½ c creamy peanut butter
½ c granulated sugar
1/3 c light brown sugar
½ tsp vanilla extract
1 egg
½ c rolled oats
1 c semisweet chocolate chips


Directions
Preheat oven to 350 degrees. Line two baking sheets with parchment paper and set aside. Whisk together the flour, baking soda and salt; set aside. On medium speed, cream together the butter, peanut butter, granulated sugar, brown sugar and vanilla extract, about 3 minutes. Add the egg and beat to combine. On low speed, gradually add the flour until just combined. Stir in the oats, and then the chocolate chips. Using a tablespoon drop a walnut size dough ball onto prepared baking sheets about 2 inches apart. (Note: the original recipe suggested a 3 tbsp. sized dough ball but I didn't want monster cookies). Before placing in the oven slightly smash the dough down so it is not in a ball shape. Bake for 6-8 minutes, or until the cookies are lightly golden. Cool completely on the baking sheet and then store in an airtight container at room temperature.

Baked Apples with Oatmeal Streusel Topping

Ingredients
3 to 4 apples, sliced in half & scoop out the seeds and stem.
A little over half stick melted butter or margarine
1/2 c oats
1/2 c flour
1/2 c brown sugar
1 tsp cinnamon
pinch of ginger
pinch of salt

Directions
Mix all ingredients, except apples. Fill and top apple halves with mixture. Bake at 350 degrees until tops are golden brown and apples swell, about 30 minutes.

Oatmeal Meatloaf

Ingredients
1 lb ground beef
1 egg
1/4 c gluten free ketchup
1 tsp Worcestershire sauce
2 tbsp onion, diced
1/2 c water
1 c gluten free oats
1 tbsp Italian herbs
1 tsp salt
1/2 tsp black pepper

Directions
Blend all ingredients and press down into a loaf pan.  Bake 1 hour at 350 degrees. Top with more ketchup and bake 5 more minutes.

Gluten Free Granola Cereal

A friend of mine, Lisa, attended a class on cooking gluten free. She came away with several great recipes. Here is one that would be great for adults and kids.

Ingredients
5 c oats (make sure they are certified gluten-free)
2 c sliced almonds
2 tsp cinnamon
1 tsp kosher salt
1 1/2 c mixed dried fruit (we used apricots, sour cherries, and golden raisins)
Honey, to taste
2 tbsp "light" olive oil

Directions
Preheat the oven to 350 degrees. Mix together the oats and the almonds. Make sure you use a large baking sheet or roasting pan for this (I prefer the roasting pan, because you can really swirl around those ingredients without spilling them on the floor.) Sprinkle the cinnamon and salt over the top. Stir it up. Toss the bite-sized pieces of dried fruit over the top of the oat mixture. To be honest, you might want more than 1 1/2 cups here. Stir it all up. Drizzle the honey evenly over the surface of the oat mixture. Do the same with the oil. Stir it all up until everything is well coated - not too sticky, but not dry either. Put in the oven. Bake for 12 minutes, then stir well. Put the pan back in the oven. Repeat this process three more times (it could be two or four times, depending on your oven). You’re looking for the granola to be not-at-all wet, golden brown, with a bit of crunch.

Note: feel free to add more seeds and nuts, and whatever mixture of dried fruit you want.

Oatmeal Chocolate Chip Cookies

This might be my new favorite cookie. They are a combination of chewy on the inside & crunchy on the outside. Perfect!

Ingredients
1 c oil
1 c sugar
1 c brown sugar
2 eggs
1 tsp vanilla
2 c flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
2 c dry quick cooking oats
6 oz chocolate chips

Directions
Cream oil & sugars. Add eggs & vanilla. Mix well. Beat in flour, baking soda, baking powder & salt. Stir in oats & chocolate chips. Drop by teaspoonful onto a greased cookie sheet. Bake at 350 degrees for 8-10 minutes. Let cookies sit on pan for 3-5 minutes before removing & placing on a cooling rack.

Caramelitas

Ingredients
1 c + 3 tbsp flour
1 c quick oats
3/4 c brown sugar, packed
1/2 tsp baking soda
1/4 tbsp salt
3/4 c butter, melted
1 (12.25 oz.) jar caramel topping
1 (6 oz.) pkg. semi-sweet chocolate chips
1/2 c walnuts

Directions
Preheat oven to 350 degrees. Combine 1 cup flour and next 5 ingredients. Beat at low speed until well mixed. Pat evenly into ungreased 9" x 13" pan. Bake 10 minutes. Stir topping and 3 tablespoons flour until mixed. Remove pan from oven, sprinkle chocolate chips and nuts on cake. Drizzle caramel topping on top of nuts and chips. Return to oven. Bake 20 to 25 minutes or until brown. Cool before cutting into bars, 2 1/2". Yield: 3 dozen bars.

Oatmeal Pancakes


This recipe comes from my friend Lisa. These pancakes sound so delicious. She said they passed the palate test of her two kids. I can't wait to make them.

Ingredients
1/2 c regular flour
1/2 c wheat flour
1 c quick oats (optional: can grind in food processor for finner consistency)
2 tbsp brown sugar
3 tsp baking powder
1/2 tsp salt
1 1/2 c milk
2 tsp vanilla
4 tbsp applesauce
2 eggs

Directions
Mix together and drop by ladle full in a skillet coated with non-stick cooking spray heated to between medium and medium-high (depending on how your stove runs).
Flip when bubbles appear and start to pop.

These can be frozen and then reheated in the microwave. My kids LOVE these!

Oatmeal Craisin Cookies

These are my sister's famous oatmeal craisin cookies. They are delicious. Her husband makes a special request for these very cookies.

Ingredients
1 c butter, softened
1 1/2 c brown sugar
1/2 c sugar
2 eggs
1 1/2 tsp vanilla
2 cups all purpose flour
1 tsp baking soda
1/2 tsp salt
2 cups oats
1 cup pecans
1 cup dried cranberries
1 cup white chocolate chips

Directions
Cream together the butter, brown sugar, sugar, eggs and vanilla. Add flour, baking soda, salt and oats. Stir well. Then add pecans, cranberries and chips. Stir well. Bake at 350 degrees for 10-12 minutes.

Renee's Apple Crisp



My friend, Renee, from high school recently kept posting on Facebook about making all these apple crisps. I finally had to get her recipe. The smell of this while it is baking is like heaven. I just love the smell of apples & cinnamon. This was delicious & the family loved it.

Ingredients
Apples
2 c packed brown sugar
1 ½ c quick oats
1 ½ c flour
2 tsp cinnamon
1 c cold butter
Directions
Peel and slice apples into a 9 X 13 pan. (I simple fill the pan ¾ full). Combine brown sugar, oats, flour, and cinnamon in a bowl. Cut in cold butter. (I use my hands to blend all the ingredients into a thick crumb mixture). Cover apples with the crumb mixture. Bake at 375 degrees for 40-50 minutes.
