Gluten Free Coconut Flour Banana Muffins


Ingredients
1/2 c Coconut Flour
1/4 tsp salt
1/2 tsp baking powder
6 eggs
4 tbsp Coconut Oil, melted
1/4 c honey
2-3 ripe, mashed bananas
1/2 c nuts (optional)
Directions
Mix all ingredients together, then pour batter into a well greased (or paper lined) muffin pan. Bake at 350 for 15-25 minutes. Makes 12 muffins.

Dinner Muffins

These are the quickest, yummiest dinner muffins I have ever tasted. Yes, they are a muffin not a roll. You will have the ingredients on hand so throw these together for your next meal.

Ingredients
2 c self rising flour
1/4 c mayonnaise - do not substitute
1 1/4 c milk

Directions
Pre-heat oven to 400 degrees. Grease a 12 count regular-size muffin pan. In a mixing bowl, combine flour with mayonnaise and milk. Stir until smooth. Do not over mix. Divide mixture evenly into the muffin pan. Bake for 15 minutes and serve warm. Don't forget the real butter.

Blueberry Muffins



Speaking of the same neighbor that I talked about in the Blackberry Pie recipe, I am going to talk about her in this muffin recipe. As mentioned she baked all the time. Our family was blessed to be on the receiving end of many yummy things. My brother, Shane, had a favorite and often requested baked good....Blueberry Muffins. The kids would gather their coffee cans to help in the search for those round bountiful blueberries. We were always rewarded with warm, from the oven, muffins. YUM! I can still taste those in my mouth. I use her recipe to make blueberry muffins, but nothing is as good as when you were a child.

Ingredients
1 egg
1/2 c milk
1/4 c oil
1 1/2 c self rising flour
1/2 c sugar
1 c drained blueberries
Directions
Beat all ingredients, except blueberries, with a fork. Gently fold in blueberries. Pour batter into muffin cups. Bake at 400 degrees for 20-25 minutes.
