Chicken and Dumplings Crock Pot

My sister made this recipe last week and sent it to me. I am a hug fan of dumplings so I made this right away. It was absolutely delicious and the kids loved it.

Ingredients
4 boneless skinless chicken breasts
2 tbsp butter
2 cans of cream of chicken soup
1 can of cream of mushroom soup
1 lg package of Pillsbury buttermilk biscuits
1 chicken bouillon cube crushed (put in sandwich bad and smash)
1 can of chicken broth

Directions
Spray crock pot with cooking spray. Mix cream of chicken and mushroom soups and crushed bouillon cube together. Put chicken and butter in crock pot. Pour mixed soup over chicken. Pour chicken broth over everything. Cook on high for 5 hours. Pinch off biscuits into crock pot and let cook until they are done.

Cheddar Ham Cups

I love to serve these little bites at showers & parties. They are the perfect little appetizer.

Ingredients
2 c finely shredded cheddar cheese
5 oz thinly sliced deli ham, chopped
3/4 c mayonnaise
1/3 c real bacon bits
2-3 tsp Dijon mustard
1 large tube flaky biscuits

Directions
In a bowl, combine the cheese, ham, mayonnaise, bacon & mustard. Split biscuits into thirds. Press onto the bottom & up the sides of an ungreased mini-muffin pan. Fill each with about 1 tablespoon of the cheese mixture. Bake at 450 degrees for 9-11 minutes or until golden brown & cheese is melted. Let stand for 2 minutes before removing from the pans. Serve warm.

Cinnamon Biscuits

This recipe also comes from Rebecca. This looks like one for me to make my family this Saturday. We love our sweets.



Ingredients
2 c. sifted flour
1 tbsp. baking powder
1 tsp. salt
1/4 tsp. baking soda
1/4 c. vegetable oil
3/4 c. buttermilk
8 tbsp. butter, softened
3/4 c. sugar
1 tsp. cinnamon

Directions
Combine flour, baking powder, salt, and baking soda in a medium bowl and mix well. Stir in vegetable oil. Add buttermilk and stir just until blended. Knead the dough on a lightly floured surface until smooth. Roll dough into a 15 x 8-inch rectangle.Preheat oven to 400 degrees. Grease a 9-inch round baking pan. Spread butter over dough. Combine sugar and cinnamon in a small bowl and mix well. (This makes quite a bit!) Sprinkle over butter. Roll up rectangle, jelly roll fashion, starting from one long side. Pinch seam to seal.Cut roll into 1-1/2- inch slices. Arrange slices, cut side up, in baking pan. Bake until lightly browned about 15 to 20 minutes. Once cooled, you can ice with powdered sugar icing.
