My friend, Rebecca, has had so much snow the last few days that all she can do is cook, cook & cook. She shared a couple recipes with me today. This sounds delicious. We've been eating a lot of soup too. The weather has been cool enough here in south GA to enjoy it!
Ingredients
3 medium potatoes
2 c. water
1 small onion
3 tbsp. flour
crushed red pepper flakes
ground black pepper
3 c. milk
1/2 tsp. sugar
1 c. shredded cheddar cheese
1 c. cubed cooked ham
Directions
Peel potatoes and cut into 1-inch cubes. Bring water to a boil in a large saucepan. (I also add some chicken stock to add more flavor.) Add potatoes and cook until tender. Reserve 1 cup of liquid and drain potatoes. Set aside. Peel and finely chop onion. Melt butter in saucepan over medium heat. Add onion and cook until tender but not brown. Add flour to onions, season with pepper flakes and black pepper to taste. Cook 3 to 4 minutes. Gradually add potatoes, reserved liquid, milk and sugar to onion mixture, stir well. Add cheese and ham. Simmer over low heat 30 minutes. May also need salt to taste.
