Mississippi Mudd Cake

A request came from Kathy in Georgia for a special Father's Day dessert. This one is from a dear lady I met when I first moved south. She was a great cook. This recipe was one of my favorites!

Ingredients
Cake
1 c canola oil
1/3 c cocoa
1 1/2 c self rising flour
1 c nuts
3 tsp vanilla
4 eggs, beat well
1 3/4 c sugar
1 bag mini marshmallows

Frosting
1# powdered sugar
1/2 c evaporated milk
1 1/2 sticks margarine, softened
1 c nuts
1 tsp vanilla
1/3 c cocoa

Directions
Mix all cake ingredients, except for marshmallows. Pour into 9x13 pan. Bake at 300 degrees for 40 minutes. Pour marshmallows over warm cake & put back into oven to melt marshmallows. While cake is baking, prepare frosting. After marshmallows have melted, spread the frosting over warm cake.

It's rich, sweet, & chocolate-y!! Cake was super moist!
