This is my all-time favorite cookie. It's also appropriate since I am an Ohio Buckeye!
Ingredients
2 c. peanut butter
2 sticks of butter, softened
3 3/4 c. powdered sugar
1 # chocolate candy bark
Directions
Cream butter slightly. Add peanut butter. Cream together. Add powdered sugar. Mix until well blended. Roll into walnut size balls & place on a lined cookie sheet (wax paper or aluminum foil). Once you have filled an entire tray, place in the freezer for a few minutes. You can melt the candy bark in the microwave according to the package directions. I like to use a double broiler so that my chocolate stays melted the entire time I am dipping. Using a toothpick or wooden skewer, stick the top of the peanut butter ball & dip into the melted chocolate. Only cover about 3/4 of the ball (this is my pet peeve, some people cover the whole thing - obviously they have never seen a buckeye nut). Place back on the cookie sheet. Once you have the sheet filled stick it back in the freezer until all is hardened. Remove from cookie sheet & store in freezer bag. Remove from the freezer as needed. We personally like to eat them frozen - yummy!
