Skillet Meat Loaf

I saw this recipe on Mr. Food about 10 years ago & have been making it ever since. The family loves it with mashed potatoes.

Ingredients
1 # ground chuck
1/2 c stuffing mix
1 small onion, finely chopped
1 egg
1 can condensed Italian or tomato soup, divided
1/4 tsp salt
1 tbsp vegetable oil
1/4 c water

Directions
In a large bowl, combine the beef, stuffing mix, onion, egg, 1/4 cup of soup and the salt. Mix well. Shape into 4 oval patties about 1/2 inch thick. Heat the oil in a skillet over medium heat. Add the patties & brown on both sides. Drain if necessary. Meanwhile, stir the water into the remaining soup & pour over the patties. Reduce heat to medium-low, cover & cook 15-20 minutes or until no pink remains in the beef. Stir the sauce occasionally.
